SALA R.C was a contemporary restaurant concept in collaboration with Belmont St. Moritz, a well-established wine bar and café in the heart of St. Moritz. We took over the culinary direction for over three months during the 2024/25 season, bringing a carefully curated menu with a reduced but refined selection to the café. The offering featured ever-changing dishes — from beef tartare with tom yam emulsion to fresh crudos with aguachile, followed by compressed persimmon with vanilla miso ice cream and oolong. Our focus was on quality and the best seasonal products, working closely with local producers from St. Moritz and the Engadin region to deliver a unique and thoughtful dining experience.
