CHEF'S TABLE by Raul & Carl – a collaboration between the renowned Signau House boutique hotel in Zurich and R.C Concepts. Over the span of two days, we served up to 85 guests with a 4-course menu, including dishes as seen on top: from forelle with Adora tomatoes to white asparagus with tom yum bisque espuma and caviar. For the main course, som flank steak with morels and a chicken velouté, and for dessert, some vanilla miso ice cream on a take of a classic cruller with cassis and oolong.
